If you have been following us for a while, you know that we are big fans of cottage cheese. We’ve been seeing these delicious stuffed cottage cheese tomatoes online and we figured we needed to try them out. They are high in protein and with tomato season upon us they are extra delicious.
Cottage Cheese Stuffed Tomatoes
Ingredients
- 2-3 large tomatoes
- 1 cup of cottage cheese
- 1/4 cup of Parmesan
- 1 lemon
- 1 garlic clove
- 1 tbsp of fresh herbs
- Salt
- Pepper
Instructions
- Preheat your oven to 425 degrees.
- Scoop out the insides of your tomatoes and then salt them and set them aside.
- Next you are going to place your cottage cheese and Parmesan in a bowl.
- Using a zester, zest your lemon and also your garlic clove.
- Add in your fresh herbs (we used parsley and thyme). Give it a really good mix. Salt and pepper your cottage cheese to taste.
- Before you place your cottage cheese mixture into your tomatoes, dump out any of the extra juices that may have formed while they were resting. Split your mixture between your tomatoes. Next we topped them with a squeeze of fresh lemon juice, some Parmesan and an extra sprinkle of pepper.
- Place them in the oven to bake for roughly 20 minutes. For the last few minutes, we switched the oven to broil to get a nice little crunchy layer on top.
Notes
You can eat these delicious tomatoes by themselves or you could squish them on top of your favorite multigrain bread. Whichever way you enjoy eating it. We think that you will love it. Please let us know if you try it out.
