Black Bean Salsa
Ingredients
- Salsa
- 1 can of black beans, rinsed and drained
- 1 cup of frozen corn thawed, or 1 small can of white shoe peg corn
- 1 cup of chopped tomatoes
- ½ cup green onion, chopped
- 2 tbsp chopped cilantro
- 2 Serrano chili peppers seeded & finely chopped
- Dressing
- 3 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp cumin
- ½ tsp salt & freshly ground black pepper
Instructions
- Mix up the dressing in a small bowl and set aside.
- Place all chopped ingredients together in a medium sized bowl and toss together.
- Add the dressing over the top and toss again so that the dressing is evenly distributed.
- Serve with pita chips.
Notes
This salsa is great on its own but is also really delicious over eggs in the morning, over cottage cheese and it makes a nice addition to your tacos or burrito bowls. For leftovers, refrigerate in an airtight container.
