Tea is the second most widely consumed beverage in the world—right behind water (sorry, coffee lovers!). With over 300 varieties steeped in global tradition, it may surprise you that nearly all true teas, including black, green, white, and oolong, come from a single source: the Camellia sinensis shrub. What gives each tea its unique character isn’t the plant itself, but how the leaves are processed—ranging from delicate white teas to full-flavored black teas and everything in between. Traditionally, tea is categorized into six types: white, yellow, green (including matcha), oolong, black, and post-fermented.
In this first article of our three-part Real Food Tea series, we’re spilling the tea on caffeinated varieties—those brews that not only awaken your senses but deliver a nutritious array of antioxidants, amino acids, and other health-supportive compounds. Whether you’re sipping on a bold cup of Earl Grey or the earthy depth of oolong, we’ll explore how each type is crafted, what makes them chemically unique, and how to brew them for the ultimate flavor and benefit.
Tea contains over 2,000 chemical constituents, many of which interact synergistically to impact flavor, aroma, and health benefits. Here are some of the key categories:
Polyphenol[1] compounds are potent antioxidants and also reduce unwanted inflammation.
Alkaloids[2] are chemical compounds made by plants that contain nitrogen. These compounds can have various effects on the human body and nervous system. The alkaloid caffeine affects brain chemistry and acts as a stimulant; other alkaloids in tea can help the body eliminate excess water and lower blood pressure.
Pigments, which give tea its color, include chlorophyll (in green and matcha teas) and carotenoids. The possible health related effects of chlorophyll are not clear at this point. Carotenoids, found in many colored plant parts such as peppers and carrots, are anti-oxidants that can be converted to Vitamin A in the body.
Vitamins in tea include vitamin C, vitamin E, and B-complex vitamins like riboflavin.
Minerals and Trace Elements[3] play roles in metabolic, immune, and antioxidant processes.
Some of the differences between tea types depends on the degree to which the chemicals in the tea have reacted with the element oxygen in the air. That reaction is called oxidation.
White Tea (caffeine: 15–40 mg)
The least processed of all teas, white tea is made from young leaves and buds that are simply withered and dried. Its delicate nature preserves a high concentration of polyphenols. It’s also rich in amino acids and boasts a subtle sweetness due to low oxidation.
Yellow Tea (caffeine: 30–50 mg)
Yellow tea is rare and requires skilled craftsmanship. After a brief oxidation, the leaves are “sealed” and lightly steamed in a moist environment—a process called men huan. This step mellows the flavor and reduces bitterness, while preserving antioxidants and amino acids.
Green Tea (caffeine: 20–50 mg (Matcha: 60–80 mg)
Green tea is minimally oxidized, with leaves quickly steamed (Japanese style) or pan-fired (Chinese style) to preserve chlorophyll and catechins—particularly epigallocatechin gallate (EGCG), one of the most powerful polyphenols studied for its antioxidant and anti-inflammatory benefits. Matcha is made from shade-grown leaves, which enhances both chlorophyll and L-theanine, giving it a smooth umami taste and calming effect.
Oolong Tea (caffeine: 30–70 mg)
Oolong tea is partially oxidized and comes in a wide spectrum—from lightly floral to deeply roasted. Many oolongs are rich in essential oils that contribute to their complex aroma and taste.
Black Tea (caffeine: 40–90 mg)
Black tea is highly oxidized, creating compounds that are responsible for its rich color and bold flavor. Earl Grey also contains bergamot oil, which contributes additional antioxidants and anti-anxiety properties.
Dark/Pu-erh Tea (caffeine: 30–100 mg)
Pu-erh tea is aged and undergoes microbial fermentation, creating unique polyphenols. Pu-erh’s earthy flavor deepens with age, and the caffeine content can vary widely.
Loose Leaf Tea vs. Tea Bags
Loose leaf tea is generally superior in quality, freshness, and nutrient content compared to commercial tea bags. Here’s why:
- Whole Leaves vs. Dust and Fannings: Loose leaf tea typically uses full, unbroken leaves, which retain more essential oils, antioxidants, and volatile compounds. Tea bags often contain the lowest grade of tea leaf pars—tea dust or fannings—resulting in a duller, bitter brew with fewer health benefits.
- Better Flavor Extraction: Whole leaves unfurl during steeping, maximizing surface area for proper extraction of flavor and nutrients. Tea bags restrict water flow, reducing flavor complexity.
- Reduced Risk of Microplastics: Many conventional tea bags (especially those made from nylon or PET) release microplastics into the hot water. Loose leaf tea eliminates this concern.
- Customization & Sustainability: Loose leaf gives you the ability to control quantity and blend types, and minimize packaging waste—making it both a higher quality and more environmentally friendly choice.
Water Temperature:
- White & Green: 160–185°F (70–85°C)
- Oolong: 185–205°F (85–96°C)
- Black & Pu-erh: 200–212°F (93–100°C)
Steeping Time:
- Green & White: 1–3 minutes
- Oolong: 3–5 minutes
- Black: 3–5 minutes
- Pu-erh: 4–6 minutes (can be re-steeped multiple times)
Storage Tips
- Store tea in airtight containers away from light, moisture, and strong odors that tea can absorb.
- Green and white teas are best consumed within 6–12 months.
- Black and pu-erh teas can last longer—and in some cases, improve with age.
Pro Tips:
- Use filtered water for the cleanest taste.
- Don’t over steep—this extracts excess tannins and can make your tea bitter.
- Pre-warm your teapot or cup to maintain water temperature and optimize extraction.
