Lentils are nutrient dense so we figured we may as well create a recipe with them! Everything cooks in one pot and it is quite simple to make.
Curry Lentil Soup
Ingredients
- 1 yellow onion diced
- 3-4 carrots chopped
- 4 stalks of celery chopped
- 5 cloves of garlic chopped
- 1 lemon
- 1 cup of lentils
- 1 can of chopped tomatoes (28 oz)
- 2 cups of water
- 4 cups of vegetable or chicken stock
- 3-4 teaspoons of curry
- 1/4 teaspoon of pepper
- 1/4 teaspoon of salt
- Extra virgin olive oil
- 1-2 cups of chard or kale chopped
Instructions
- Place roughly 1/4 cup of olive oil in your Dutch oven or heavy duty pot that has a lid. Heat it on medium heat.
- Add your carrots, celery and onion into the pan.
- Sprinkle with some salt and stir occasionally until veggies soften and onions are translucent.
- Next add in your chopped garlic and your curry and 1/4 tsp of both salt and pepper. Stir to evenly coat all your vegetables and allow it to cook for a minute or so.
- Now you will add your tomatoes and allow them to cook for a few minutes.
- Place your lentils, water and broth into your pot and bring it up to a boil.
- Once it is boiling, turn the heat down to a simmer and set aside a timer for about 25 minutes. You want your lentils to soften but still hold their shape.
- At this point if you are feeling adventurous you can take out 2-3 cups of your soup and blend them until smooth. Add this back into your soup.
- You can also skip this step and will just have a chunkier soup.
- Add in the juice from your lemon and your chopped chard. Simmer it for about 5 minutes.
- Taste your soup at this point and add any additional spices or lemon juice.
