We have previously explored the worlds of caffeinated teas and herbal infusions, and there’s one more fascinating and often overlooked category that deserves its own spotlight; fermented teas. Unlike typical teas, fermented varieties undergo a transformation that changes their chemistry, flavor profile, and potential health benefits. In this final installment of our tea series, we’ll dive into the ancient yet still evolving world of fermented teas, with a focus on Kombucha, Pu’er, and Awa Bancha.

Each of these teas represents a distinct type of fermentation tradition shaped by culture, climate, and microbes:

  • Kombucha, the globally popular fizzy tea tonic, is produced by fermenting sweetened tea with a combination of bacteria and yeast called a SCOBY (Symbiotic Culture of Bacteria and Yeast).
  • Pu’er, an aged Chinese tea, undergoes natural or accelerated fermentation that transforms the flavor over time, much like aging wine.
  • Awa Bancha, a rare Japanese tea, is fermented with lactic acid bacteria after steaming and rolling, resulting in a tangy, low-caffeine brew.

In this article, we’ll explore how these fermented teas are produced, their unique beneficial compounds, the best practices for preparation and brewing, and what to look for when purchasing.

Kombucha

Production: Kombucha is brewed by adding a SCOBY (Symbiotic Culture of Bacteria and Yeast) to sweetened black or green tea. The mixture ferments for 7 to 21 days. During that process, the SCOBY converts sugar to organic acids, trace alcohol, carbonation, and various bioactive compounds.

Beneficial Compounds:

  • Probiotics: Live bacteria that may support gut health
  • Acetic, gluconic, and glucuronic acids: Organic acids that support detoxification
  • Polyphenols: Antioxidants derived from the tea base

Preparation: Store-bought kombucha is ready to drink. If brewing at home, use sanitized equipment and allow it to ferment in a warm (not hot) place away from direct sunlight. Be wary; contamination by harmful bacteria or mold can occur if the brewing environment or equipment isn’t clean. Taste frequently to control tartness and carbonation.

Purchasing Tips:

  • Choose brands with live, unpasteurized cultures
  • Avoid products with excessive added sugars or artificial flavors
  • Glass-bottled kombucha tends to maintain freshness better

Pu’er Tea

Production: Pu’er (or Pu-erh) tea originates from Yunnan Province, China. It is made from the leaves of the Camellia sinensis plant. There are two primary types: Shen (raw), which is naturally fermented over years, and Shou (ripe), which undergoes accelerated fermentation via a wet-piling process that creates a compost-like environment.

Beneficial Compounds:

  • Theaflavins and thearubigins: Unique polyphenols offering antioxidant and anti-inflammation properties

Preparation:

  • Use freshly boiled water (around 203°F)
  • Rinse leaves briefly with hot water to “wake them up”
  • Steep for 10–20 seconds initially, increasing with each subsequent steeping

Purchasing Tips:

  • Look for teas labeled with region and production year
  • Aged Pu’er is more valuable, but ensure proper storage
  • Avoid very cheap Pu’er, which may be low quality or contain additives

Awa Bancha

Production: A traditional Japanese post-fermented tea from Tokushima Prefecture. After harvesting in summer, the leaves are steamed, kneaded, and packed into barrels to ferment anaerobically with naturally occurring lactic acid bacteria. After several weeks, the tea is sun-dried.

Beneficial Compounds:

  • Lactic acid bacteria: May support digestion
  • Catechins: Antioxidants found in many Japanese teas
  • Low caffeine and low bitterness

Preparation:

  • Use near-boiling water (around 194°F)
  • Steep 2–5 minutes for a mellow, slightly sour cup

Purchasing Tips:

  • Due to its rarity, purchase from reputable Japanese tea specialists
  • Look for artisan-crafted teas made in Tokushima
  • Store in a cool, dry place away from sunlight
